Mit diesem Kaiserstühler Wermut bringt Signore Faude ordentlich dolce vita an die Bar. Und folgt damit keiner abstrakten Idee, sondern einer sehr persönlichen Passion. Der bitter-süße Italo-Klassiker – für ihn einer der besten Aperitivi überhaupt! Bei dem Anspruch wundert’s kaum, dass die Idee für Faude Wermut ganze vier Jahre reifen durfte. Wenn selber machen, dann richtig: Hervorragende Burgundersorten aus dem Kaiserstuhl, restsüß vergoren, mit hauseigenen Kräuterauszügen versetzt und dunklem Karamellsirup abgerundet. Die über 12 Gewürze, Wurzeln und Kräuter werden einzeln austariert und unterschiedlich lange mazeriert. Bei aller gewünschten Intensität überrollt hier also keine vordergründige Gewürzoffensive. Neben dem namensgebenden Wermutkraut (Artemisia absinthium) kommen die Kräuternoten von Tonkabohne, Zimtblüte, Bitterorange und Co. zwar kräftig, ja!, dabei jedoch immer feingliedrig differenziert. Schmelzig eingebunden durch Traubensüße und Karamell, pendelt sich dieser Wermut so Schluck für Schluck in jene charakteristisch bitter-fruchtsüß-würzige Balance. Der perfekte Aperitivo – pur auf Eis, als Spritz und für klassische Cocktails wie Negroni oder Americano. Italienliebe hausgemacht!
