The Martini sparkling wine cellar is located in the old wine village of Girlan. Since 1985, sparkling wine has been produced using the bottle fermentation method from the traditional grape varieties Chardonnay, Pinot Blanc Weissburgunder and Pinot Noir, grown at altitudes of 500 to 600 metres. The sparkling wines must mature for at least three years in the old vaulted cellar before they are disgorged and allowed to leave the winery. At least four vintages are stored in the cellar at the same time. The name "Comitissa" comes from the old Latin and means countess.
