"This project is an expression of our passion for wine," says Angelika Falkner, landlady of the noble hotel "Das Central" in Sölden in the Tyrolean Ötztal. But what is the Ötztal doing in the Falstaff Wine Guide? No vines grow there! Exactly - the "PINO 3000" project was born at one of the annual high-altitude wine tastings during our Wein am Berg event. Again and again we got into conversation with winegrowers and journalists and philosophized about what it is like to let a wine mature at this altitude. With the support of Paul Achs from Gols, Joachim Heger from Ihrigen in Baden and Wolfgang Tratter, cellar master at the St. Pauls winery in South Tyrol, they set about implementing the plan. The common denominator was quickly found, as all three winemakers are hopelessly addicted to the Pinot virus and are known for their great wines from this wonderful, but also capricious variety. They each selected two of their best barriques from the 2011 harvest and blended the individual batches into a new creation. The first edition of "PINO 3000" was born. Since the opening of the ice Q gourmet restaurant in 2013, the "PINO 3000" has been maturing in this special place. At 3,048 m above sea level on the Gaislachkogl ski mountain in Sölden, a dedicated cellar was created for this exceptional wine. The current 2016 vintage is now also stored here. Once the barrels have matured, the batches are sent to the St. Pauls winery in South Tyrol, where they are blended and bottled. This is why the "PINO 3000" project was also included in the South Tyrol section of the Falstaff Wine Guide. After bottling, the wine is returned for another year of bottle ageing ... back to the ice Q restaurant - always nice and slow, as it is at 3000 meters. You can enjoy the "PINO 3000" in the "ice Q" restaurant on the Gaislachkogel. A limited number of 33 "PINO 3000" packages can be subscribed directly at the DAS CENTRAL hotel and in the ice Q restaurant.
