Thomas Schwarz was born in 1972 and grew up in Purbach. To learn how to make wine, he spent another year and a half in Krems after graduating from high school in Eisenstadt, but he still loves exploring the Leithaberg. Why move on as long as there is still so much to learn? And while his wine is making itself more and more, Thomas Schwarz can do other nice things: spending time with his daughter, Enduro riding, downhill mountain biking, stand-up paddling or simply listening to heavy metal.
If he gets even better at "letting the wine do the talking," then maybe one day he'll be able to realise his dream and brew his own good beer. That, he fears, is probably much more difficult to achieve than good wine.
Thomas Schwarz's goal is to make himself as superfluous as possible - in the vineyard and in the cellar. His vines and the soil in which they grow should be so healthy that they hardly need any help from humans, the wines should ferment spontaneously, developing without intervention, in large barrels that change their flavour as little as possible. Most of all, he would like his wine to bottle itself as well. Accordingly, he defines himself more by what he does not have and does not make: no barrique, no cultured yeasts, no synthetic pesticides and insecticides, no artificial fertilizers. In one sparkling wine, the Rosé Brut "ZZ", he even does without dosage and sulphur.
Since 2016, Thomas Schwarz has renounced the designation quality wine and sells his wines as Landwein or wine, and especially those from the best sites. In his opinion, the best proof of quality is when he accidentally finishes a bottle alone in the evening. With his "Rosé Brut" this happens to him again and again.
