Die Rebsorte Monastrell (Pie Franco/ungepfropfte Rebstöcke) aus alten Weinbergslagen gibt diesem Wein seinen Ursprung. Ein tiefgründiger und ausdrucksstarker Wein, der trotz der vollen Struktur seine herrliche Frische zeigt. Terroir: Atlan & Artisan hat den einzigartigen, beinahe vergessenen Weinberg von 87 ha, mit unveredelten Rebstöcken – zwischen 40 und 60 Jahren alt, auf 850 Metern liegende Parzellen, extrem steiniger und kalkhaltiger Boden mit geringem Humusanteil, wiederbelebt. Guillot-Erziehung, sehr heiße Tage, extrem kühle Nächte, wenig Regen zwischen April und September, gänzlich naturnahe Behandlung der Rebstöcke. Vinifikation: Unter strengsten Qualitätsanforderungen wird der Epistem SP in den herausragenden Lagen des Weinbergs Espernalas angebaut. Nach der Ernte in kleinen Boxen erfolgt die manuelle Auswahl der Trauben für den Epistem SP . Ein Teil der Trauben wird im Stahltank vergoren, der andere Teil wird in offenen Bariquefässern vergoren. On the nose red as well as black cherries, blackberries, toasted notes, menthol, rum pot, dark chocolate. On the palate powerful, ripe tannin, well integrated acidity, beautiful fruit, good companion to fully flavoured dishes.
