The white wine Assyrtiko Wild Ferment Santorini, vintage 2021 from the winery Gaia Wines Santorini has been rated in 2023 by Peter Moser with 95 Falstaff points.
On the nose lemon, pomelo, papaya, yeast, and smoky, tuffy notes. On the palate the wine shows a very unique structure; a gripping texture is tightly woven into the substantial body with firm acidity and intense tactile minerality. The wine has a lot of depth and at the same time seems fresh and especially piquant, with penetrating minerality. .
