Tasting from 14.07.2021: Ulrich Sautter

Strong use of oak, floral varietal aromas from hyacinth to pomelo to honeydew melon. Mealy phenolics on the palate, lively acidity and medium fullness, noticeably salty notes on the finish and equally tactile minerality. Needs a dish with sweetness, lobster and crab claws.

Peach and a touch of coconut and toast. In the mouth above all round and supple, but also with a phenolic component, almost viscous in the middle palate, mild acidity, aromatically surprisingly restrained. Possibly needs further maturation.
