The name says it all: this "spontaneously fermented" wine displays aromas of herbs, fresh yeast dough, ripe apple and apple skin. Tight and compact on the palate with a lovely savoury and mineral base. A characterful, approachable and gastronomic wine, not fully fermented.
More about the tastingDistinct herbal notes, yeast, apple peel, some malt. The "spontaneously fermented" did not want to become completely dry, so the noticeable residual sweetness is a defining element on the taut and spicy palate. Elaborated, good extract, exciting food wine.
