Tasting Notes
Disgorged 2/22. A delicate ripe savouriness, apple peel, yeast, rust, also a slight undertone of butter. On the palate, the wine is finely chiseled and incredibly firm at the same time, an ultra-fine mousse sparkles over the palate, the acidity gives tension and reinforces the tactile-mineral lime notes, the wine finishes bone-dry and yet not a bit tart.
