Tasting Notes
Disgorged 10/2017. Light straw color with greenish reflections. Buttery and yeasty on the nose, appearing young. With air contact, slowly releasing aromas of maturity: anise, vanilla (probably not wood related), brioche and black pepper. Rich on the palate, an expansive baseline but also very pithy with fine nerve and elegant, very fresh mousse. Creamy notes on the finish contrast with abundant fruit. Vinous and gastronomic. With shellfish, but also with oily fish and opulent sauces.
