Present new oak; toasty, with savoury accompaniments, cashew nut and apricot. Taut and particularly fresh on the palate thanks to some carbon dioxide, with a mineral colour and medium density. Lively acidity and (not only because of this) an elegant food companion. Dim sum with prawns.
