Tasting Notes
Day 1: Bright ruby red. Juicy elderberry and a hint of blossom too, blueberry and lavender. An aromatic interplay of fruit and ethereal notes. Sandalwood, mint and mulberry. Limey freshness on the palate with a juicy, unobtrusive acidity. Fine, soft tannins. Balsamic, very elegant and delicately woven, yet long and deep. Day 2: The interplay of ethereal and fruit is clearly more present, but the fruit takes over and appears somewhat riper. More ripe sweet cherry, vine tomato and rosehip. On the palate, more round, soft fruit pushes the lime to the sides. It gains herbaceousness and finesse. Softer in itself but also somewhat less tense. Day 3: Today it is clearly more ethereal again with lots of herbal spice. Rosehip tea, white pepper. The fruit recedes. Gentle, soft, round, juicy on the palate. Cherry fruit. Carries acidity. Some loss of length. Minerality somewhat more present. Overall more harmonious and elegant.
