Lemon peel, mustard flour, some hard cheese rind, becomes increasingly complex with air. On the palate, "dry" means really dry. Thanks to the low primary fruit, the structure dominates here, the phenolics, further mustard flour, savoury, lactic tones - absolutely consistent!
