Day one: Dense and concentrated aroma, smoke and lots of herbal savouriness, sage, wormwood, juniper, clove, pepper, slowly joined by plums and cherries. Dense and powerful on the palate, characterised by wood, supple base with juicy fruit and lots of savouriness, robust, grippy tannin shows certain ageing potential for years to come. Day two: Wood still prominent on the nose, fig and slight ripeness, wood still very vivid on the palate but better integrated, more fruit, cassis, sloe Day three: more fruit, integrated wood savouriness, subtle raisins, supple and full-bodied on the palate, vivid fruit supported by fine savouriness, fine-grained tannin structure.
