Deep salmon pink. Spicy, balsamic fragrance. Dried lemon peel. Lots of minerality, damp stone. Dense on the palate, a delicate layer of noble phenolics, ripe, stable acidity, a rosé with real depth and a pleasantly dry structure, mineral-based, animating to drink and at the same time structured and gastronomic. Serve with crayfish salad or grilled Norway lobster.
