Tasting Notes
Slightly cloudy pale gold with a hint of copper in the reflections. Smells of fir honey, red Kampot pepper, a hint of chopped shallot, overall very closed. With standing time in the glass there is a first small change towards chopped garden herbs, lovage, but also slightly animalistic. On the palate it shows with comparatively noticeable alcohol, soft and silky, rather discreet yet supportive acidity, more juice than structure, neutral in flavours, slightly mineral on the finish. Day 2: Orange confit, quite clear, a hint of herbal bitters, nothing reductive anymore, mellow and slightly tannic pixelated flow, a bit light on the palate centre, but straightforward and pure. Day 3: blossom honey, beurre noisette, juicy and slender at the start, then mealy and substantial, almost a bit thin in the fruit, but still structurally persistent, fine. Day 5: Freshly peeled clementine, also blossom honey, early vivid palate fruit, dried fruit, cassata, seems dense and silky homogeneous, has clearly increased in volume and length.
