Stuffed Dates with Gorgonzola and Crispy Parma Ham

aged Gorgonzola (Gorgonzola piccante)

thinly sliced Parma ham, torn in half lengthwise
Preparation:
- Line a baking tray with baking paper.
- Using a paring knife, slit the dates lengthwise and carefully remove the pits without splitting the dates.
- Spoon the Gorgonzola evenly into the dates and wrap each in a piece of Parma ham.
- Heat the grill to medium.
- Place the stuffed dates, filled side up, on the prepared baking tray. Grill for 4–5 minutes, until the ham is crisp and the cheese starts to bubble and ooze. Handle carefully – the dates will be extremely hot!
- Leave to cool for a few minutes before serving.
