Translated, Ipovrichio means “submarine” – and the name is quite fitting. It likely refers to the way the dessert is enjoyed: a spoonful of the sweet paste is dipped into a glass of ice-cold water, where it slowly dissolves and is gently stirred. It is precisely this simple yet unusual ritual that has led to the dessert’s rediscovery in countless videos on Instagram and other social media platforms.
Sweet, Versatile and Full of Nostalgia
The spoon sweet is essentially made from a mixture of sugar, glucose syrup and water, which is whipped into a thick, glossy paste. Depending on the region, other flavours such as lemon or rose may also be added. The long cooking process creates a chewy, candy-like consistency that can easily be portioned and served.
Traditionally, Ipovrichio is enjoyed exactly as it appears in the videos currently going viral online: a spoonful of the sweet mixture is dipped into a glass of ice-cold water.
