Step into Umarell in Gothenburg, and you’re instantly transported to another time. Housed within the storied Dickson Palace—an 1862 landmark of Florentine neo-Renaissance architecture—the restaurant’s setting is steeped in history. Inside, however, a chic, modern Italian dining room creates an intriguing contrast between old-world grandeur and contemporary warmth.
Led by restaurateur Oliver Ingrosso and chef Louise Johansson, Umarell aims to serve refined Italian cuisine that feels at home in its opulent surroundings—yet intentionally softens the formality of the palace. The menu blends comfort and sophistication with dishes like beef ragù with chitarra spaghetti, fusillone with pistachio pesto and stracciatella, and naked cod loin with pine nuts, sage, and endive salad.
The restaurant’s name, Umarell—an Italian term affectionately used for an older man who watches over a construction site—couldn’t be more fitting. During the restaurant’s two-year renovation, curious locals often peeked through the fences to catch a glimpse of the transformation. “It’s one of the most beautiful locations in all of Gothenburg,” says Johansson. “The Dickson Palace truly shines, and knowing that people will soon gather here to eat and enjoy themselves fills my heart with warmth. We want the atmosphere to feel inviting—elegant, but with that unmistakable Gothenburg charm.”
