Max Duhs' Tosto isn’t a traditional Italian restaurant but rather Italy-inspired, characterized by playfulness, passion, and integrity. The name itself means “strong and self-assured”, a fitting description of both the philosophy behind the food and the man in charge, whose experience at Bar Montan and most recently Bâtard sets high expectations.
Tosto makes its pasta by hand every day, dry-ages its own meat and fish, and cures its own charcuterie. The menu promises an exquisite brisket in broth with fava beans, mushroom agnolotti to rival the best in town, and a “Tiramisu” pancake cake destined for Instagram fame. Classic craft meets contemporary creativity, where traditional techniques lay the groundwork for new flavors and unexpected combinations. The wine list follows the same mindset—rooted in Italy with a curiosity for unusual grapes and lesser-known regions, yet open to global inspirations.
At the bar, this philosophy becomes a carefully developed cocktail menu where ingredients from the kitchen are repurposed with modern techniques. Set in a bright, art-filled space with an inviting bar accessible via the café Sperling & Co’s entrance, Tosto is open Tuesday through Saturday from 5 PM on—a new spot for a cocktail, a plate of pasta, or a full dinner.
