This non-alcoholic variation of an aperitif is not only visually appealing, but also tasty.

Passion fruit and rosemary bitter broth

Ingredients
200 ml Passion fruit juice
420 ml Water
250 g Sugar
130 ml Orange juice
40 ml Lemon juice
75 g fresh rosemary
25 g Glucose syrup
4 g Saline solution (heat up 20g salt and 80g water while stirring until the salt is completely dissolved)
  • Put all the ingredients in a pan and bring to the boil once.
  • Remove from the heat and leave to cool.

Base mixture

Ingredients
Passion fruit and rosemary bitter broth
200 ml Non-alcoholic "Aperol" (or similar bitter orange aperitif)
  • Mix the passion fruit, rosemary and bitters with the non-alcoholic Aperol, cover and leave to infuse in the fridge for 24 hours. Then pour through a fine sieve or cloth and store in a cool place.
  • Pour 170 ml of the base mixture into the glass, place a dried pear chip on top and garnish with a sprig of rosemary. Add an ice cream scoop if desired.
