Classic Swiss Apple pancakes: The Apfeltatsch

Crispy, golden brown and wonderfully fragrant – Switzerland's Apfeltatsch are a delicious temptation for anyone who loves pancakes. Whether for breakfast, dessert or as a snack between meals, this specialty of the Grisons region is always delicious!

Apfetatsch, also known as Apfelküchlein or Apfelpfannkuchen, are a traditional Swiss delicacy usually served as comfort food, especially in the colder months of the year. The combination of sweet, juicy apples and a fluffy dough makes them irresistible. They can be prepared quickly with just a few ingredients and very little effort. Whether served plain, sprinkled with cinnamon and sugar or with vanilla sauce – Apfeltatsch are a treat for the whole family, perfect for freezing winter days!

Ingredients (4 servings)
200 g Flour
2 Egg yolks
250 ml Milk
4 Apples
1 pinch Salt
2 Egg whites
Butter for baking
Cinnamon sugar
  • Place the flour, milk and salt in a bowl and mix well. Whisk the egg yolks and add them, then mix everything into a smooth, semi-liquid batter. Leave the dough to rest for an hour.
  • In the meantime, peel, core and cut the apples into thin slices. Beat the egg whites until stiff and carefully fold into the batter.
  • Finally, fold in the chopped apple slices. Spoon the batter into a pan with hot butter in batches and bake.
  • Sprinkle with cinnamon sugar or powdered sugar before serving and enjoy while still warm.
