Spelt & Wild Garlic Bread

Seasonal specialty bread that has the aroma of spring with the inclusion of wild garlic.

For the Bread:

Ingredients
500 g spelt
1 sachet dried yeast
450 ml water
50 g sunflower seeds
50 g linseeds
50 g pumpkin seeds
1 handful wild garlic
1 tablespoon(s) turmeric
1 teaspoon(s) salt
1 teaspoon(s) fennel seeds
1 teaspoon(s) cumin
1 teaspoon(s) coriander seeds
  • Preheat the oven to 200°C.
  • Put the spelt, salt, fennel, cumin and coriander in a grain mill and grind finely.
  • Pour 450ml of warm water in a bowl, add the dry yeast and turmeric powder and mix well.
  • Chop the wild garlic and add to the bowl with the spelt and spice flour, sunflower seeds, linseed and pumpkin seeds, and knead everything together thoroughly.
  • Shape and place the dough in a loaf tin, sprinkle with seeds and bake for 60 minutes at 200°C. Leave to cool for 10 minutes before removing from tin.
