Tasting Notes
A hint of roasted cashew creates a smoky, salty first impression. A certain creaminess then recalls salted, liquid, smooth, blond caramel. Then the citrus lift of dried lemon peel sets in. The palate is pristine and slender, still vivid with its electric acidity, but bathed in wonderful tertiary flavours of roasted nut, candied lemon peel, and salty hazelnut praline. The mousse is lively and the tiny, fine pin-prick bubbles heighten all those gorgeous, lifted notes of citrus: charred lemon, freshly grated Amalfi zest, candied peel. There is a well of freshness here, beautiful salty depth and despite the ongoing evolution, this has a lovely future ahead of it. The finish holds the most subtle hint of coffee and addictive acidity.
