Tasting Notes
This was the first ever Belle Époque Blanc de Blancs ever made - at the time in preparation for the millennium celebrations. The nose is incredibly fresh, redolent with melted butter and dried lemon peel – mature and utterly fresh at the same time. The palate is vivid with bright lemon notes: their waxy peel, their pithy depth. There is a hint of roasted cashew and a lovely, lingering, mouth-watering saltiness. The mousse is fine, discreet by now, providing subtle energy, constant, quiet, but coming from a wellspring of profound freshness and seemingly eternal life. The finish is salty, of subtle salted, roasted cashew with hints of dashi and wax. The finish is incredibly long and totally savoury.
