Tasting Notes
Hints of bitter fir honey precede notes of molten wax and Mirabelle plum on the nose of this golden wine. The palate is just simply silky, the mousse is utterly creamy, very fine. The body is super-slender, but the flavours are immense, expansive. They unleash a sea of umami flavours, name-checking nori seaweed, dashi broth, more waxiness and more of that bitter fir honey note. This is a wonderful contradiction: utterly toned, smooth and silky yet so deeply salty, rich and resonant. Most gastronomic, incredibly long.
