The sparkling wine Clairette de Die Jaillance Brut Double Fermentation from the winery La Cave de Die Jaillance has been rated in 2025 by Peter Moser with 88 Falstaff points.
Very pale yellow-green, with silver reflections and a fine mousse. Delicate nuances of orange concentrate, yellow tropical fruit and some blossom honey on the nose. The palate is more lean, with a core of white apple and a lively acidity structure. The lemony touch on the finish leaves a similar impression to a dry Crémant.
