Die von Hand gepflückten Früchte wurden überwiegend entrappt und ohne vorher zerdrückt zu werden in offene Gärungsbehälter übertragen. Einige ganze Bündel wurden hinzugefügt, um Komplexität und Länge für das finale Produkt zu schaffen. Die Trauben wurden zuerst für 5-7 Tage ausgekühlt bevor sie dann zur schnellen, warmen Gärung kamen. Die Fermente wurden während der Gärung 3 bis 4 mal am Tag per Hand umgerührt, um die Haut in engem Kontakt mit dem vergorenen Saft zu halten. Nach der Gärung wurden die Fermente noch eine weitere Woche zum Einweichen stehen gelassen, um eine optimale Geschmacksentwicklung und eine integrierte Tannin Gewinnung sicherzustellen. Die jungen Weine wurden danach abgelassen und gepresst bevor sie für 10 Monate zur Reifung in 50% neue französische Eichenfässer übertragen wurden. In dieser Zeit durchliefen die Weine eine komplette malolaktische Gärung.

The intense aroma is underpinned by notes of smoke, wet leaves and forest floor, fruit aromas of ripe cherry and plum, along with dark chocolate and some mint. Powerful on the palate with a good amount of ripe tannins, cherry, espresso and plum are evident, the fresh and stable acidity keeps the wine on course for a long finish. Pinot with style and character.
