Tasting Notes
Day 1: Stimulating aroma of lemongrass, lime zest, with aeration freshly cut grass, some mint, fine herbal spice, hazelnut is added. Lively acidity on the palate, lots of freshness, citric aromas, green apple, some pear, excellent drinking flow, elegant, salty, good length. Day 2: Clearly reduced on the nose, again citrus elements and mint, less expressive. Resting on the palate, nutty aromas, elegant flow, good length. Day 3: Citrus elements and fresh cut grass on the nose, green apple, mint. Lively acidity on the palate, pleasantly supple, citric elements, the CO2 freshness has diminished, but the wine has undergone a metamorphosis into a well-balanced terroir wine, with a mineral character, resting in itself.
