Tasting Notes
Day one: Aroma of ripe red apple, peach blossom, some quince, with delicate herbal savouriness in the background, some mint, delicate smoke, hint of hazelnut. Lively acidity on the palate, green apple again, lots of grip, fine minerality, herbal notes, has drive and length. Culinary talent. Day two: Spicy aroma, delicate green apple, the nose appears more minty, but also somewhat less complex. Powerful and grippy on the palate, noticeable minerality, this becomes more pronounced, good length, still great with food. Day three: Spicy aroma, smoke, hazelnut, crushed rock. Less tension on the palate, still mineral, open on the palate, grippy, good length, apple and quince on the finish.
More about the tastingA tidy, fine bouquet: somewhat floral, white flowers, also berries, red currant, slightly buttery. A very mature palate structure: dense, appropriately phenolics, with a supple base and a tactile, mineral finish. Clearly more volcanic than loess character.
