Tasting Notes
Day One: Initially slightly lactic on the nose, buttermilk, buttery, apricot, also dried, tangerine peel, sage, some saffron, kumquat and a fine ethereal top note. Starts on the palate with a supple texture that is enlivened by a fine nervous acidity, calm, immanent drive, finely salty, also some white pepper and fresh ginger, mineral, good substance, does not yet appear fully developed. Day two: More floral on the nose, rose petal, mace, the slightly lactic nose seems to have receded, a fine spiciness is added. More vivid and open on the palate, juicy with ripe phenolics, the texture is somewhat softer, the fine salty minerality counteracts the slightly more prominent fruit sweetness on the back palate. Round, harmonious, elegant, mineral. Day three: The nose is vivid and to the point, yellow ripe stone fruit, pear, rose petals, has charm. Full-bodied and balanced on the palate with ripe acidity, soft texture and a mineral background, carried and also noble with immanent, calm tension. Has gained further weight, appears more elaborate.
