Tasting Notes
Day 1: Deep golden yellow. Ripe and warm on the nose. Aromas of stewed mirabelle plums, curry, saffron, macadamia, a hint of fresh vanilla and chamomile. Soft and full-bodied on the palate. Very opulent and grippy phenolics. Restrained acidity for a Riesling. The body tightens somewhat towards the back. Very spicy and tart with underlying fine fruitiness. Medium length. Day 2: Air does it good. The nose is much livelier, with fresh herbs and mint. Chamomile no longer seems boiled but fresh. Vanilla and curry more subtle. Minerality and acidity are more prominent on the palate. Firmer and more precise. The astringency fades towards the back into significantly more ripe yellow fruit. Generally increasingly exciting and elegant. Day 3: A honey component is added. Loses a little of the fresh fruitiness to boiled down warm notes. Spiciness becomes more pronounced again. Iodine, mineral notes clearly emerge. The mouth is charmingly round and juicy. The acidity is integrated and lively. More minerality and iodine here too. Significantly more tension. Seems firmer. Clearly fresher on the finish.
