Celeriac Soup with Tonka Bean

Ingredients (Serves 5)

tablespoon
vegetable oil
400
g
celeriac, trimmed and chopped
1
onion, chopped
1
tablespoon
apple cider vinegar
800
ml
vegetable stock
2
tablespoon
ground almonds
pinch
salt
pinch
multicoloured pepper
1
pinch
freshly grated tonka bean
Preparation:
- Heat the vegetable oil in a large saucepan. When hot, add the onion and cook, stirring, until translucent – the onion should not take on any colour.
- Add the celeric, stir briefly, then add the vegetable stock and vinegar. Simmer for about 15 minutes or until the celeriac is tender.
- Add the ground almonds and use a handheld stick blender to blend to a smooth purée.
- Taste and season with a pinch of freshly ground tonka bean, salt and pepper.
