Celeriac Soup with Tonka Bean

Celeriac is a versatile winter vegetable with a subtle taste. It makes a wonderful soup with a creamy texture. This recipe is refined with tonka bean, a South American spice with an alluring scent that complements the celeriac perfectly.

Ingredients (5 servings)
400 g celeriac, trimmed and chopped
1 onion, chopped
1 tablespoon(s) vegetable oil
1 tablespoon(s) apple cider vinegar
800 ml vegetable stock
1 pinch(es) freshly grated tonka bean
2 tablespoon(s) ground almonds
pinch(es) salt
pinch(es) multicoloured pepper

Preparation:

  • Heat the vegetable oil in a large saucepan. When hot, add the onion and cook, stirring, until translucent – the onion should not take on any colour.
  • Add the celeric, stir briefly, then add the vegetable stock and vinegar. Simmer for about 15 minutes or until the celeriac is tender.
  • Add the ground almonds and use a handheld stick blender to blend to a smooth purée.
  • Taste and season with a pinch of freshly ground tonka bean, salt and pepper.
