Falafel Aboudis Style

Asian flavours

Spring in the Orient tastes refreshingly good. The chefs of the restaurant Habibi & Hawara present delicious oriental recipes.

Ingredients (6 servings)
250 g Chickpeas, dried
1/2 onion, roughly chopped
2 garlic cloves
1/2 bunch Parsley
1/4 bunch Coriander
1 lemon (juice)
1/2 teaspoon(s) baking powder
1/2 tablespoon(s) Coriander seeds, ground
1/2 tablespoon(s) cumin, ground
salt
pepper
oil to brush
  • Place the chickpeas in a bowl, cover completely with water and soak for 24 hours.
  • Drain the water off.  Mix the drained chickpeas together with the onion, garlic, parsley and coriander through the finest slice of a meat grinder.
  • Add lemon juice and baking powder.
  • Season very generously with salt, pepper, add the ground coriander seeds and ground cumin and knead everything well.
  • Roll the dough into small balls about 3-4 cm in diameter, brush generously with oil, place on a baking tray lined with baking paper and bake in the oven at 200 °C for about 20 minutes until the falafel are lightly browned and crispy. Turn once after 10 minutes!
