Wild Garlic Pesto

This is a wonderful recipe showcasing wild garlic by Eckart Witzigmann.

Ingredients
70 g wild garlic leaves, de-stemmed
70 g flat parsley leaves
60 g pine nuts, roasted
salt
30 g Pecorino, freshly grated
100 g Parmesan cheese, freshly grated
1 l olive oil
  • Wash the wild garlic and parsley leaves, dab dry and chop coarsely. Finely grind the pine nuts and salt in a mortar, then add the herbs and work everything into a fine paste. Stir in the Pecorino and Parmesan and add the oil.
  • Mix everything well and fill the pesto into a dark container.
