New Izakaya Restaurant KOYN to Open in Mayfair in September

Housed in the building of the former US embassy off Grosvenor Square, the two-storey restaurant will serve modern Japanese fare.

KOYN will be the fifth restaurant by LSL Capital, founded by father-daughter team Samyukta and Dinesh Nair, whose portfolio consists of Michelin-starred Jamavar, MiMi Mei Fair, Bombay Bustle, and the yet to open Socca, all in Mayfair, London.

New creations

The kitchen will be helmed by Auckland-born executive chef Rhys Cattermoul, formerly of The Greenhouse and the Nobu restaurants in London and Hong Kong. Next to sushi and specialities from the robata grill, Cattermoul's creations include "steamed clams nabe with cordycep mushroom, yuzu sake soy, spinach and samphire as well as a red mullet tempura with yuzu kosho tosazu and homemade kombu salt."

Two storeys

KOYN is themed around "nature-spirited roots and duality of Mount Fuji." This is expressed in two distinct spaces: MIDORI on the ground floor which channels "zen gardens" featuring Japanese fretwork and a "bronze leaf mirror fashioned into a radial, rising sun." MAGMA on the floor below, "an immersive subterranean space enveloped within the dark volcanic heart of Mount Fuji." At MIDORI, diners will be in the hands of the sushi master while MAGMA will favour grilled specialities like "hojicha-smoked lamb marinated with spicy kuromame miso, hispi cabbage grilled with homemade koji dressing as well as wagyu ishiyaki, served on a sizzling hot stone with KOYN’s Yakiniku Sauce."

KOYN is scheduled to open on 9 September 2022 at 38 Grosvenor Street, London, W1K 4AG.
