Oven-baked calamari

Ingredients
800 g squid (calamari), cleaned and skin removed
1 red onion, sliced into rings
150 g cherry tomatoes, halved
100 g black olives, pitted
2 cloves garlic, chopped
50 g parmesan, grated
1 lemon, juice and zest
120 g breadcrumbs
A splash of olive oil
Salt
1 small bunch parsley, chopped

Preparation

Preheat the oven to 180 °C (fan). Line a baking tray with parchment paper.

Rinse the squid and pat dry. Cut off the head just behind the eyes and remove the hard “beak.” Pull out the transparent backbone from the tubes. Slice the tubes into rings about 1 cm thick and halve the tentacles lengthwise. Place everything in a large bowl.

Add the onion, cherry tomatoes, olives, garlic, Parmesan, lemon zest, and breadcrumbs. Drizzle with olive oil, season with salt, and mix thoroughly with your hands.

Spread the mixture evenly onto the prepared baking tray. Drizzle with a little more olive oil and bake for 25–30 minutes, until the calamari are nicely crisp.

Before serving, drizzle with lemon juice and garnish with chopped parsley.
