Oysters with Fresh Passion Fruit and Chilli

Oysters provide environmental benefits by removing excess nutrients and improving water quality plus they are tasty.

Ingredients (2 servings)
12 Gillardeau oysters No.3
1 ripe passion fruit
1 fresh turmeric rhizome
1 pinch(es) fish sauce
3 tablespoon(s) olive oil
1 Thai chilli, red
8 stalk(s) chives
1 lime
crushed ice
  • Cut the passion fruit lengthwise. Mix half of the pulp with some finely grated fresh turmeric and strain through a sieve to remove the seeds.
  • Season with a dash of fish sauce and whip with the olive oil to a creamy emulsion. Carefully open the oysters, drain the water.
  • Place on a serving plate with crushed ice, drizzle a little of the emulsion on each oyster and garnish with a slice of chilli and some chives.
  • Put the other passion fruit half in the middle of the oysters, cut lime into eight pieces, arrange them on the plate and enjoy immediately!
