Tasting Notes
Quite a savoury vibe – almost of miso and soy sauce – sets the tone on the nose. With more air, a coniferous scent comes in, as does the berry scent of dried cranberry. The palate has slightly diffuse tannins, seems looser, with much more soy sauce savouriness kicking in. There is a certain rusticity, seemingly more extracted. There is a lovely echo of dried bay leaf and crushed yarrow. The tannins still coat the mouth – downright asking for that Bistecca. The finish is mouth-watering and aromatic.
