Has the substance and power of a southern rosé, the wildly savoury spontaneous fermentation harmonises with the fruitiness of the tomato. Balsamic savouriness, quince, strawberry, thyme and sage, pepper. Full-bodied and freshly acidic on the palate, dense, unaffectedly straightforward, with a supple base and juicy finish.
