Tasting Notes
Day One: Strong golden yellow, subtle amber. On the nose, ripe apricot and some banana peel with fresh elements, wormwood, green apple, apple peel, garden herbs, fresh caraway, some iodine. Fresh on the palate with interwoven, slightly steely acidity, citric tartness, juicy, pomelo, somewhat saline, the phenolics are grippy and ripe, individual and yet cultivated. Day two: The nose is somewhat softer and more developed, the ripe apricot takes its place, but also fresh peppermint and green apple as an invigorating element, some iodine. The palate is also somewhat more accessible with a softer texture, but with an emphasis on the mineral aspect. The tannins and phenolics still show a certain austerity, suggesting further development. Day three: No big change in the aroma, lots of ripe apricot, also slightly dried, a little more herbal and a little more iodine and a hint of malt. The tannins and phenolics are even more developed, the austerity has diminished, but still has a certain pithiness and reserves for further development. Strong minerality. Not a classic Silvaner.
More about the tastingRich golden yellow colour, freshly grated apple on the nose, also dill, lime zest. Unexpectedly different on the palate, tart, not crisp, rather restrained, fluid acidity.
