Slovenian top chefs do not cook for effect, but for identity. They dig deep into old recipes, ferment like their grandmothers, collect herbs – and proudly present their region on the plate.
The top spot in 2025 has once again gone to Hiša Franko in Kobarid, where Ana Roš serves more than just a menu – she stages a sensory journey through the Soča Valley, characterized by wild herbs, fermented vegetables and surprising clarity. It is closely followed by the Restavracija Milka in Kranjska Gora, which combines Alpine finesse with Nordic precision. In third place, Grič in Horjul delights with radically seasonal cuisine and homegrown produce.
