N25 Caviar has introduced its newest ambassador edition: an exclusive, fifty-tin collaboration with three-star chef Björn Frantzén. More than a limited release, the project reflects a shared philosophy—one where refinement, traceability and quiet intensity shape an ingredient at the center of modern Nordic gastronomy.

Few chefs have shaped contemporary Nordic cuisine as profoundly as Frantzén. With three Michelin stars, a constellation of restaurants across Europe, the Middle East and Asia, and a culinary language defined by clarity, precision and emotion, he has become one of the world’s most influential voices in fine dining. His work blends Nordic purity with subtle Japanese influences, creating dishes that feel both elemental and exacting—driven by an uncompromising search for the finest possible ingredients. Frantzén was also recently named Falstaff Personality of the Year 2026 in Sweden.

For him, caviar is not just a garnish but a structural element. “It’s one of the most special ingredients to work with,” he says. “Handled carefully, it complements a dish, creating balance and a pure umami flavor.” With restaurants spanning Stockholm, Singapore, Dubai and Europe, he encounters countless producers, yet N25’s approach to aging and selection remains distinctive. “N25' process of aging hits the right notes and is unlike anything else,” he adds.

The collaboration was developed in the Frantzén Group R&D kitchen in Stockholm, where seasonal menus evolve constantly—while the caviar remains true to its essence. The result: a bespoke Kaluga Hybrid, chosen for its clarity and restrained elegance. The roe exceeds 3.3 mm, with a low-salt profile designed to pair naturally with his Nordic sensibilities and the Japanese influences that run like a thread through his cuisine. The taste, as he describes it, is “clean, with fresh nutty notes and a long, lingering umami finish”—a flavor that reflects the chef’s preference for precision over opulence.

N25’s latest ambassador editions also include a collaboration with three-star chef Jan Hartwig of JAN in Munich. “Working hand in hand with Jan and Björn allows us to push the boundaries of what caviar can express,” says Hermes Gehnen, CEO and founder of N25. “Aside from flavor, there are intentions and a story behind the method.

Available exclusively through the N25 online boutique in the UK and EU, each caviar comes in a refined gift presentation with mother-of-pearl spoons, tin openers, a booklet and a card signed by the chef. Prices begin at €200 / £175.

A collaboration characterized by intention rather than extravagance, the N25 x Björn Frantzén edition stands as a measured expression of one of the Nordic region’s most influential culinary voices—and of caviar.
