Noma is coming home. After months in Los Angeles, the pioneering Copenhagen restaurant will reopen this August with fresh leadership, a new culinary rhythm and a vision that promises to redefine its future.

After an ambitious residency in Los Angeles, the world-renowned restaurant Noma is preparing to return home. The Copenhagen institution announced that it will reopen on August 5, 2026, marking the beginning of a new chapter for one of the most influential restaurants in modern gastronomy.

The decision follows months of reflection during Noma LA, a project that brought together designers, artisans, fishermen, foragers and producers from across California. While the residency celebrated creativity and collaboration, it also prompted the team to reconsider the restaurant’s future direction.

Rather than returning to its former format, Noma will relaunch with a renewed structure and leadership team. Long-time collaborators are stepping into key roles, with Mette Brink Søberg becoming Head of R&D, Pablo Soto appointed Executive Head Chef, and Annika de Las Heras taking over as CEO.

The restaurant will also introduce a new concept built around “twelve seasons of Noma.” Instead of its previous seasonal rhythm, each month will feature its own culinary expression, inspired by the ingredients, landscapes and ideas of the moment. The new approach is designed to create greater opportunities for research, experimentation and creative development.

“Our ambition remains the same as it has always been: to keep exploring, to keep learning, and to continue to become the best version of Noma we’ve ever been,” the team said in a statement.

Reservations for the reopening season, running from August 5 to October 31, will be released on June 24 at 18:00 CEST.
