Tasting Notes
Disgorged 11/23. A nuanced Pinot nose with subtle yeasty notes underneath and some apple peel, completely Champagne-like in character. In the mouth a very fine mousse is followed by a compact finish that weaves together the ripe but well-sustained acidity with subtle mineral tones and a somewhat dry phenolic note. Very well composed!
