JAHRGANG: 2023 REBSORTE: 60% Merlot, 20% Cabernet Sauvignon, 20% Cabernet Franc. WEINAUSBAU: Traditionelle Kelterung in Edelstahltanks mit einer Maischestandzeit von 14 - 16 Tagen bei 28 bis 32 ºC. Der Wein reift für über 14 Monate zu einem Teil (77%) in neuen Barriques, zum anderen Teil (23%) in einjährigen Barriques. Die drei Rebsorten werden getrennt ausgebaut; die Assemblage erfolgt kurz vor der Abfüllung. Häufiges Abziehen vom Bodensatz erlaubt eine Abfüllung ohne Schönung, Kaltstabilisierung und Filtrierung; als Zeichen dieses schonenden Umgangs kann sich ein leichtes Depot in der Flasche bilden. ALKOHOLGEHALT: 13.2% Vol. FARBE: Intensives und sattes Rubinrot. BOUQUET: Das intensive Bukett bietet vielfältige Sinneseindrücke; darunter Früchte Noten von reifen Schwarzen Beeren wie Brombeeren, sowie Menthol und Röstaromen (Kakao und Waldnuss). GESCHMACK: Frisch und fruchtig. Mit einer guten Struktur. Die Tannine sind von ausgezeichneter Quantität und Qualität. Der Abgang ist lang, anhaltend und sehr harmonisch. SPEISE-EMPFEHLUNG: Begleitet vorzüglich Gerichte aus dunklem Fleisch, wie z.B. Schmorbraten; ideal zu Geflügel wie Perlhuhn, Taube oder Ente. SERVIERTEMPERATUR: 16 - 18 °C LAGERFÄHIGKEIT: Der D'Antan 2023 wird ab Herbst 2025 seinen vollen Charakter entwickeln; bei optimaler Lagerung bereitet er bis 2033 und darüber grossen Genuss.

Restrained bouquet with aromas of dark berries, cherries, plus fine wood spice and spices. Medium-bodied on the palate, somewhat tart. Noticeable tannin, ripe acidity and a long finish accompanied by roasted notes.
