JAHRGANG: 2021 REBSORTE: Merlot WEINAUSBAU: Traditionelle Kelterung mit verlängerter Maischestandzeit von 10 bis 16 Tagen bei 28 bis 32 ºC. Nach der Gärung verweilt der Wein über 15 Monate in Barriques aus französischer Eiche. Häufiges Umziehen der Barriques erlaubt eine Abfüllung ohne Schönung, Kaltstabilisierung und Filtrierung; als Zeichen dieses schonenden Umgangs kann sich ein leichtes Depot in der Flasche bilden. ALKOHOLGEHALT: 13.5% Vol. FARBE: Intensives, sattes Rubinrot. BOUQUET: Komplex und intensiv, mit Noten von Pflaumen und Sauerkirschen. Röstnoten die an Lakrtiz erinnern, vergleitet mit leichten Gewürzdüften. GESCHMACK: Weiche, vollmundige Frucht. Frisch, elegant, reich mit einer guten Struktur und süsslichen Gerbstoffen. Der Abgang ist harmonisch, ausgewogen und lang. SPEISE-EMPFEHLUNG: Fleischgerichte der raffinierten Küche: Wild, Geflügel, Roastbeef; auch herzhafte Käsesorten. Notes of black cherry, cassis leaves and cranberries on the nose. Some undergrowth and hints of allspice and clove. Fresh acidity on the palate, beautiful fullness, slightly noticeable tannin and aromas of plum, wild berries, liquorice and caramel. Long finish.
