Tasting Notes
Day One: Almost opaque in colour with lightening at the edges. Quite powerful and expansive aroma with ripe notes, cassis, sloe, blackberry, plum, black pepper, cold ash, juniper, pine needles. The broad-shouldered structure and substance from 2018 is balanced on the palate by a bone-dry nature, fine acid nerve, black olive, the palate fruit has retreated, ripe, fine-grained and well-structured tannins, long finish with salty-tart moments. Day two (bottle 1): Even more austere on the nose than on the first day, ripe plum and sloe, tart chocolate, plum confit, plum liqueur too. On the palate also notes of ripe plum and olive tapenade, fine acidity, austere fruit, salty-tart. (bottle 2): Seems livelier on the nose, plum, savoury, wet forest floor, chocolate, ash, but also more ethereal. Fresher on the palate, the acidity is quite lively, salty, tart, sloe, also chokeberry, seems a little longer than bottle 1, but neither has gained anything. Day three: Herbal, juniper, also some ester, massala. The plum is there, plum confit, also somewhat liqueur-like, black pepper. Good tension on the palate, sloe and some sour cherry, some plum, vivid acid vein, reduced fullness, fine-grained tannin, good length.
