Tasting Notes
Subtle aroma, ethereal, spruce needle, chalky, cool crushed rock, chalky, savoury, dill, bay leaf, sour cherry, wild berries, dark chocolate. Dense and still closed on the palate, restrained fresh fruit, tightly woven, fine-grained tannin structure, fine acid nerve, long on the palate. Day two: A little more open on the nose, more dark fruit to the ethereal notes. Restrained fruit on the palate, grippy phenolics intensifying somewhat towards the finish Day three: Again more open on the nose, fruit somewhat more intensified towards the savouriness, light and dark forest fruit, inkwell, dark cocoa powder. More density on the palate, again dark cocoa powder to the more vivid fruit, phenolics bind in, fine acid flow, not at the end.
