Tasting Notes
Day One: Quite relaxed and still reserved on the nose, ripe pear, fine smoke, ripe stone fruit such as mirabelle plums, dried chamomile, oyster shell, iodine. Clearly contoured on the palate, firm and compact structure, dense extract, stable, slightly salty acidity, the tannins are still slightly brittle and hint at certain ageing potential, mineral structure, good length, not yet fully developed. Day two: A relaxed aroma with some promise: Finely smoky, savoury, some malt, pear, yellow, ripe stone fruit, dried sage, also stony components that become more apparent. The tannins are more accessible and more developed, which softens the impression of austerity, soft, supple mid-palate, the stronger salty-iodine component in the finish provides profile. Day three: Still shows its own characteristics, some ester, plus smoky and herbal elements, quince, pear peel, dried lemon zest, overall rounder aroma. Still powerful on the palate, vivid, no signs of fatigue, stable acidity, grippy phenolics, mineral finish, some shortcrust pastry.
